In a shallow bowl, whisk together the egg and milk. Set aside. In a mixing bowl, combine cream cheese, artichokes, cheese, parsley and pepper. Divide and spread the artichoke mixture over all four pieces of bread. Divide all deli meat evenly and place on top of two slices of prepared bread. Use the 2 remaining slices of bread and cover each prepared slice, pressing together to make a sandwich. Heat a non-stick pan over medium heat and lightly mist the bottom of the pan with vegetable oil cooking spray. Dip both sides each sandwich into the egg mixture. Arrange sandwiches in the hot pan and cook for 1 1/2 to 2 minutes. Carefully flip the sandwiches over and cook an additional 1 1/2 to 2 minutes or until sandwiches are golden. Transfer the French toast to a cutting board and cut each on the diagonal. Serve each half with a spoonful of Spicy Tomato Salsa (see recipe below).
Spicy Tomato Salsa
Ingredients:
1/2 cup cherry tomatoes or 1 medium ripe tomato, diced
1 tablespoon shallot, minced
2 tablespoons fresh basil, chopped
1 tablespoon balsamic vinegar
Several dashes of hot sauce, to taste
Salt and freshly ground black pepper, seasoned to taste
Directions:
In a mixing bowl, combine all of the ingredients. This mixture can be prepared several hours in advance if covered with plastic wrap and stored in the refrigerator.
