The chicken can be made ahead of time, frozen and then pulled out just before cooking.
Sauce:
Place blueberries in a medium saucepan along with a couple tablespoons of water on a burner at medium heat. This can warm up as you prepare the chicken.
Chicken:
Can be prepared ahead and placed in the freezer or done that night.
Crack the egg in a dish and scramble it. Set aside. Either mince the ZonePerfect® Bars along with the breadcrumbs and salt or place all of it in a food chopper or blender. The breadcrumbs will keep the ZonePerfect Bar pieces from sticking to your knife or the blades of the blender. They should be in fairly small pieces so they will stick to the chicken. Spread out the crumbled mixture on a flat surface or dish. Take a chicken tender strip and dredge it through the egg. Let excess drip off. Place the egged strip on the crumbled mixture and press chicken into it, gently flipping the strip over to completely cover. Lift up and set aside. Repeat till all chicken tenders strips are coated. If freezing, layer a piece of waxed paper between the strips and place in a freezer wight bag. Otherwise place 4 strips in a saute pan already at medium high heat with 1 Tablesspoon of Olive Oil. Usually only 4 strips will fit at a time. Just a few minutes on each side will brown the crumbles and cook the chicken thoroughly. Once the first 4 are done add the second tablespoon of olive oil, allow it to warm up, and cook the remaining chicken strips.
At this time check the blueberry sauce and add the tablespoon of Honey and a dash of kosher salt. Stir gently and remove from heat.
Plate the blueberries and chicken strips together.
