Green Chicken Chili



Ingredients


1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt, or seasoned to taste
1 tablespoon extra virgin olive oil
1 cup onions, chopped
2 small cloves garlic, minced
1 yellow bell pepper, diced
One 4 ounce can chopped mild green chilies
1 jalapeño or Serrano pepper, minced
1 cup green salsa (mild, medium or hot)
One 15 ounce can cannelloni or white kidney beans, drained and rinsed
3 cups (14 ounces) cooked boneless breast of chicken, shredded
1 1/2 cups low-sodium chicken stock
1/4 cup cilantro leaves only, coarsely chopped
Garnishes:
Chopped onion
Fat-free sour cream
Reduced fat sharp cheddar cheese
Lime wedges

Directions

In a small bowl, combine chili powder, cumin, coriander and salt. Set aside. Heat oil in a medium pot over medium heat. Add onions, garlic, yellow pepper, green chilies and jalapeño. Sauté for 3 to 5 minutes or until vegetables are tender. Add seasoning mixture and cook, stirring constantly for 1 minute. Add salsa, beans, chicken and chicken stock. Simmer for 30 minutes. Stir in chopped cilantro and serve.
