Combine the first 8 ingredients in a mixing bowl. Add tortellini, chicken and Parmigiano Reggiano and toss to combine. Season with salt and pepper to taste. Divide salad greens among four plates. Spoon 1 cup of the chicken mixture over the greens. Drizzle with desired amount of Balsamic Vinegar Reduction. (see recipe below)
Balsamic Vinegar Reduction
Ingredients:
1 cup balsamic vinegar
2 teaspoons sugar
Directions: Place vinegar and sugar in a small sauce pan. Bring to a simmer over medium heat and cook until mixture has reduced to 1/4 cup. Check mixture frequently as to not allow the mixture to reduce completely and burn. Cool and store in an airtight jar in the refrigerator. This mixture can also be drizzled over fresh steamed vegetables.
