Turkey Chili



Ingredients


1/2 cup uncooked brown rice
1lb. Extra lean ground turkey
1 can (14oz) diced tomatoes including liquid
1 tsp ground cumin
1 can (14 oz) white northern beans (rinsed & drained)
1 1/2 cups frozen corn (lightly rinsed to remove any ice)
1 1/2 -2 cups chicken broth
1-2 tbs chili powder
Tabasco sauce, numerous drops

Directions

Cook brown rice according to package directions. (The rice boils for 30-40 minutes. This step can be done the night before.) In a large non-stick skillet brown turkey and drain. Add tomatoes including liquid, northern beans, frozen corn, chicken broth to desired thickness, chili powder to taste, ground cumin, and brown rice.
 
Cover and simmer 5-10 minutes. Stir in Tabasco to taste just before serving.
