Chocolate Ginger Angel Food Cake



Ingredients


Cake:
1 cup sifted confectioner’s sugar
¾ cup sifted cake flour
¼ cup cocoa powder
¼ tsp salt
1/8 tsp ground ginger
12 large egg whites
1 ½  tsp cream of tartar
¾ cup granulated sugar
2 ½ tsp vanilla extract

Add Before Serving
1 cup fresh strawberries, sliced
½ cup fresh blueberries
½ cup fresh red raspberries
1 medium fresh mango (cut and core removed)
1 medium fresh papaya (cut with center removed)
8 tbs Old Fashioned Caramel Apple Dip, warmed, (divided by 8)
8 tbs chocolate syrup (divided by 8)
8 Tbs Aerosol Whipped Heavy Cream (divided by 8)
1oz Dark Semi-sweet chocolate bar, shaved (divided by 8)

Directions

Cake: 
  1. Place rack in lower third of oven and preheat to 350°F. Set aside an ungreased 10-inch tube pan with removable bottom.
  2. Sift together confectioner’s sugar, cake flour, cocoa powder, salt and ginger three times using sifter onto waxed paper. Set aside.
  3. Whip egg whites on low speed until foamy. Add cream of tartar and increase speed to medium. Whip mixture just until soft peaks form. Continue whipping and add granulated sugar in steady stream until whites thicken. Soft, droopy peak will form. Add vanilla extract.
  4. Using large rubber spatula, sprinkle ¼ of the flour mixture over egg whites and gently fold into whites. Repeat, folding in ¼ mixture at a time.
  5. Transfer batter to tube pan and gently smooth surface with spatula.
  6. Bake until top springs back when touched, approximately 40 to 45 minutes.
  7. Invert tube pan onto neck of bottle or funnel to cool.
Topping:
  1. Rinse fruit thoroughly. Combine in bowl and set aside.
  2. Remove cooled cake from pan.
  3. Serve each slice with: ½ cup fruit mixture, drizzle 1 Tbs chocolate syrup, 1 Tbs caramel sauce, and top with whipping cream. Sprinkle with chocolate shavings.
Health Tip:
A delightful mix of flavors and textures. Hard to find cake with 8 grams of protein. The dark chocolate and fruit topping add some antioxidants not often found in such decadent desserts.
